The leaves of the Lemon Myrtle tree (Backhousia citriadora), dried and ground. Probably the most well-known of the native herbs, and with good reason - it's packed with a heady blend of lemon, lemongrass and lime.

Ideal with fish, other seafood and white meats as well as many desserts. Mix it with youghurt or sour cream for a tangy accompaniment, or add to tea for a great pick-me-up.
