Sugar & Spice and all things nice
- Made from pure sun-sweetened sugar cane, the NI Organic Fairtrade sugar crystals are less refined than traditional sugar.
- The berry of the Mountain Pepper tree (Tasmannia lanceolata) has an intensity of flavour that must be respected.

Fairtrade & Wild Cashews in Sri Lanka
Ceylon Organic Spice Exports (COSE) was formed in 1997 to provide an alternative trade outlet for small scale traditional farmers. Typically, farmers produce food for the family and spices for sale on around half an acre. COSE pays at least 50% above what they could receive in the local market for their spices. Sun drying and packaging provides an income for women with few other options for earning. Farmers and their families can supplement their income by harvesting wild fruit and nuts, including cashews, from the surrounding forests. A Common Savings Fund, set up by COSE, is now managed by the family groups, for use during emergencies, such as a sudden illness or death, or weather related home repairs. In addition COSE provides school books and uniforms for the farmers' and workers' children.
