The leaves of the anisata tree, also known as aniseed myrtle (Anetholea anisata), dried and ground. With a flavour similar to star anise and fennel, but with an extra sweetness. Intensely flavoured, so small amounts deliver a big flavour hit... be judicious.
Perfect with lamb fillets, small fish like whitebait, goat's cheese, eggplant and tomato dishes, pancakes or puddings.
